This recipe for kale and avocado salad is a great one! Personally, I love the flavor of kale. I recently read that that the darker the green, the healthier the vegetable.

In this case, the kale and the avocado are green, which means this salad must be insanely healthy! Not only is it healthy, but it’s also delicious.

This is an excellent side salad or a great light lunch. Enjoy!

Ingredients

  • 2 ripe avocados
  • 1 bunch kale
  • 1/2 cup walnut halves
  • 2 cloves garlic
  • 1⁄2 cup fresh orange juice
  • 3 tsp soy sauce
  • 3 tbsp fresh lemon juice
  • 4 tbsp extra-virgin olive oil
  • freshly ground black pepper, to taste

Instructions

  • 1. Halve, pit, and dice avocados. Finely chop kale.
  • 2. Combine avocado, walnuts and kale in a serving bowl.
  • 3. To make the vinaigrette, smash garlic and chop into a fine paste. Whisk with orange juice, soy sauce and lemon juice. Slowly whisk in oil.
  • 4. Toss kale mixture with vinaigrette and season generously with pepper. Serve!
