Ingredients

  • 12 large cloves garlic, peeled and divided
  • 1 lemon, juiced
  • 1 tbsp chopped fresh rosemary leaves
  • 1 tbsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp olive oil
  • 1, 6-lb boneless leg of lamb, trimmed and tied

Instructions

  • 1. Preheat the oven to 450 degrees Fahrenheit. Combine 8 garlic cloves, rosemary, 1 tbsp salt, 1 tsp pepper, lemon juice and olive oil into a processor and pulse until the ingredients turn into a paste. Generously coat the top and sides of the lamb with the rosemary mixture. Let the lamb marinate for 1 hour before roasting.
  • 2. Cube remaining garlic. Stuff garlic pieces into the meat, using a pairing knife to slit little pockets all over the roast.
  • 3. Roast lamb for 1 hour, 45 minutes to 2 hours. Remove from oven and tent with foil. Let the meat rest for 10 minutes before carving.
