Haricot Vert with Garlic

Haricot vert are French string beans. This string bean variety is thinner, longer and crisper. All of these things make for a delicious string bean.

That’s why I like to use haricot vert for this recipe. However, if you cannot find haricot vert in your supermarket, regular fresh string beans are totally fine.

This is a recipe for haricot vert with garlic. The beans are blanched then quickly sautéed with garlic and tossed with lemon juice. This dish is fresh, crispy, healthy and delicious. Enjoy!

Ingredients

  • 2 tbsp salt
  • 1 lb haricot vert or string beans
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • juice from 1 lemon
  • salt and pepper to taste

Instructions

  • 1. Bring a large pot of water to a boil. Add salt and throw in the beans.
  • 2. Blanch beans for 2-3 minutes. Drain and cool by running cold water over beans.
  • 3. Meanwhile, in a skillet, heat olive oil over medium heat. When warm, add minced garlic, sauté for 30 seconds, then add drained beans. Toss for 1 minute. Season with salt and pepper.
  • 4. Remove pan from heat, drizzle with lemon juice and serve.
