This is a recipe for fried sweet plantains. It’s easy and delicious. Fried plantains are a favorite all over the Caribbean, and now in my house.

It’s great to have something new to serve as a side. Make sure the plantains are not green for this dish. Brown or black coloring is best. Then just fry them up and let their natural sweetness do the rest. Enjoy!

Ingredients

  • 4 ripe, black plantains, peeled and cut on bias into 2-inch pieces
  • 1/4 cup vegetable oil

Instructions

  • 1. Heat oil in a large heavy skillet over medium heat.
  • 2. When the oil is hot, fry the plantains in batches until golden on both sides, about 5 minutes per side. Serve!
