Fresh Pea Soup

I get really excited when I can get fresh peas at the farmers market. I love snapping the pods open, and getting the sweet peas out. If you have small children its especially fun for them to do this activity.

This fresh pea soup is light and delicious. You can serve it either hot or cold.

The best kind of food is seasonal, and fresh peas are a wonderful example of just that!

Ingredients

  • 3 tbsp olive oil
  • 1 tbsp butter
  • 1 large onion, chopped
  • 3 bay leaves
  • salt and white pepper to taste
  • 6 cups vegetable stock or water
  • 1 russet potato, peeled and chopped
  • 4 cups fresh or frozen fresh peas
  • chives, chopped for garnish

Instructions

  • 1. Coat the bottom of a pot with oil and melt butter over medium heat. Add onion, bay leaves, and season with salt and pepper to taste. Sauté for 5 minutes. Add potatoes and cook for another 5-7 minutes.
  • 2. Cover with stock or water. Bring mixture to boil, then reduce heat and simmer until potatoes are tender, about 25 minutes.
  • 3. Add the peas and again season with salt and pepper to taste. Cook for another 5-7 minutes.
  • 4. Blend with an immersion blender, or in batches in a food processor. Garnish with chives and serve with crusty bread.
