Fish and Bok Choy Soup

I love this recipe, mainly for three reasons. One, it is super fast to make. Two, it’s healthy. And three, it’s delicious. Simple things are some of the best things. And this dish is just that. Two delicious fatty fish make the soup even richer.

Best of all, this fish and bok choy soup  is ready in 15 minutes. In the summer when it’s so hot, a meal that only takes 15 minutes to prepare is the perfect thing! The stove doesn’t have to burn for a long time, which is amazing news, especially if you live in New York and your apartment is tiny.

We love it spicy in my house so we add lots of Sriracha (Asian chili sauce) to our bowls. But if you like it mild, a tiny bit of hot sauce goes a long way for flavor!

Ingredients

  • 2 lbs fish filets, salmon and halibut
  • 1 qt. chicken stock
  • 4 cups water
  • 1 onion, sliced
  • 1 lb bok choy, washed and trimmed
  • 1/2 cup bean sprouts
  • Sriracha and soy sauce for serving

Instructions

  • 1. Cut fish fillets into 1 1/2 inch cubes.
  • 2. In a medium stockpot over high heat, combine stock and water. Add onion and bring mixture to a boil.
  • 3. Add fish and reduce heat to a simmer. Add boy choy and cook for 7 minutes. When fish is light pink and opaque, add the bean sprouts and ladle into bowls.
  • 4. Serve with soy sauce and Sriracha. Enjoy!
