Ingredients

  • 1 duck breast, skin on, scored
  • 10-12 oz arugula or bib lettuce
  • 1 cup cherry tomatoes, halved
  • zest and juice of 2 limes
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 clove garlic, minced
  • 2 scallions, finely chopped
  • 1 tsp honey
  • 1 tsp Sriracha sauce

Instructions

  • 1. Heat a heavy-bottomed pan over high until smoking.
  • 2. Carefully place duck breast skin side down in the pan and sear for 5 minutes. Once the skin has rendered most of its fat, flip and fry on the other side for another 3 minutes.
  • 3. Let the breast rest for 5 minutes before slicing.
  • 4. Meanwhile, whisk lime juice, zest, sesame oil, soy sauce, garlic, scallions, honey and Sriracha and set aside.
  • 5. Slice duck breast as thin as you can. Toss with arugula and tomatoes, drizzle with dressing and serve!
