Quinoa is very rich in calcium, phosphorus and iron. It is also gluten-free! Recently, I found that by adding quinoa to salads, it adds a wonderful earthy flavor to them.

This is a recipe for a crunchy quinoa salad tossed in a light dressing with arugula, zucchini, radishes, and tomatoes.

Ingredients

  • 1 cup quinoa
  • 1 tbsp olive oil
  • 1/2 cup zucchini, diced
  • 1/2 cup radish, diced
  • 1 cup tomatoes, diced
  • 1 cup arugula
  • 1 lemon, juiced
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • 1. Rinse raw quinoa thoroughly—this will remove most of the bitterness.
  • 2. Heat olive oil in a medium pot over medium-high heat and add drained quinoa. Cook, stirring constantly, until all water evaporates, about 1 minute.
  • 3. Add 3 cups of water and a pinch of salt (optional). Bring to a boil. Turn heat to low and cover. Cook for 15 minutes.
  • 4. Turn off heat and remove pot from burner. Let stand for 5 minutes. Remove lid, fluff gently, and cool.
  • 5. Meanwhile, place zucchini, radish and tomatoes in large bowl and season with salt and pepper to taste.
  • 6. Add cooked quinoa, arugula and lemon juice and mix. Serve!
