Crepes are delicious by themselves. But when you stuff them they become even better.

What are cherry blintzes? They are crepes stuffed with cherries, which makes a delicious snack or delicious dessert that can be enjoyed with tea or coffee.

This is my childhood comfort food. It brings me back to a sweet and delicious place, my grandma’s house. Enjoy a batch of these delicious cherry blintzes.

Ingredients

  • 8 crepes
  • 2 cups cherry preserves, plus 2 tbsp for garnish
  • 3 tbsp oil for frying
  • mint for garnish

Instructions

  • 1. Prepare crepes using our basic recipe.
  • 2. To fill blintzes, lay one crepe flat. Add 1 tbsp cherry preserves in the middle of the crepe and fold one of the sides over, covering the filling.
  • 3. Roll the crepe until it resembles an egg roll. Repeat until all filling and crepes are used.
  • 4. Heat pan over medium and add oil. When hot, place blintzes in single layer in pan and fry until golden brown, about 1 minute. Flip and fry on the other side. Continue until all blintzes are fried. Serve immediately, topped with jam or preserves. Enjoy!
