Charred Bell Peppers

These charred bell peppers are great dish to serve as an appetizer, a side, or on top of toasted bread like bruschetta.

I usually roast the peppers over open flame, but you can use a stovetop, grill, or oven. Once they are cleaned and dressed, you can refrigerate the peppers and keep them up to a week. So make these ahead of time and enjoy all week long. Make some charred bell peppers today. Enjoy!

Ingredients

  • 6 bell peppers, any color
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • salt and pepper
  • 1 sprig fresh oregano
  • 2 cloves garlic, pressed

Instructions

  • 1. Clean bell peppers and pat dry. Roast over stovetop, grill or in the oven until charred.
  • 2. Place peppers in a bowl and cover with plastic wrap until cooled.
  • 3. Peel off skin. Remove stem and seeds, then thinly slice peppers.
  • 4. Dress peppers with oil and vinegar, then season with salt and pepper. Let the flavors marinate together for 1 hour, then serve!
