Celery Root Soup with Poached Salmon

This recipe for celery root soup with poached salmon is a real crowd pleaser. It makes for a beautiful presentation. The creamy and mild taste of the celery root is a perfect flavor base for the poached salmon. The salmon is poached in the soup creating a deliciously unique flavor combination.

This soup is hearty enough to serve as a main dish for a lunch or light supper. Plus its delicious! You can add any fish you like but salmon is my favorite for this recipe. Enjoy!

Ingredients

  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 bay leaves
  • 1 large celery root, cleaned and diced
  • 2 large potatoes, diced
  • 4 cups vegetable stock
  • 1 cup heavy cream
  • salt and white pepper to taste
  • 6, 3 oz salmon filets
  • dill for garnish

Instructions

  • 1. Melt butter in stock pot over medium heat. Add diced onion and bay leaves. Sauté until lightly brown.
  • 2. Add celery root and sauté another 2-3 minutes. Add in the potatoes, followed by stock.
  • 3. Cook over low heat until potatoes are tender, about 20 minutes. Remove from heat.
  • 4. Remove bay leaves. Using a hand blender, puree the soup.
  • 5. Return to stovetop. Add cream and simmer for 2-3 minutes. Season to taste with salt and pepper.
  • 6. Add salmon fillets and poach in soup for 5-8 minutes. Serve with dill!
