This is a recipe for broccoli mac and cheese. This mac and cheese is so good it can be eaten as a meal all by itself. It has everything a meal should have: protein (the cheese), carbs (the pasta) and vegetables (the broccoli).

Most importantly. it’s kid friendly and absolutely delicious. Perhaps mac and cheese is not something you should be eating every day, but it’s definitely as treat and totally worth all the calories. I always believe that when indulging, you should go for the best things! Plus, when the weather is this miserable, there is nothing better than hot, creamy, baked goodness!

I like to serve this broccoli mac and cheese with a fresh green salad. Enjoy!

Ingredients

  • 8 tbsp butter
  • 5 1/2 cups milk
  • 1/2 cup all-purpose flour
  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 1/4 tsp cayenne pepper
  • 4 cups white cheddar cheese, grated
  • 2 cups Gruyere cheese, grated
  • 1 lb elbow macaroni
  • 1 cup broccoli florets
  • 1/2 cup breadcrumbs

Instructions

  • 1. Heat oven to 375 degrees Fahrenheit. Grease a casserole dish and set aside.
  • 2. Meanwhile, in a saucepan set over medium heat, warm the milk.
  • 3. In a high-sided skillet, melt 6 tbsp butter. When the butter melts, add flour and cook for 1 minute.
  • 4. Slowly pour the hot milk into flour-butter mixture whisking constantly. Keep whisking until the mixture is smooth and thick; make sure all the lumps dissolved.
  • 5. Remove the pan from heat. Stir in salt, pepper, cayenne pepper, 3 cups cheddar, and 1 1/2 cups Gruyere, and set aside.
  • 6. Meanwhile, bring a pot filled with salted water to a boil. Add the macaroni and broccoli. Cook until the pasta is al dente.
  • 7. Drain macaroni and broccoli. Stir pasta and broccoli into the cheese sauce.
  • 8. Pour the mixture into the prepared casserole dish. Sprinkle the remaining cheese over the pasta mixture and scatter breadcrumbs over the top. Top with 2 tbsp of butter and bake 30 minutes, until the top is lightly browned. Enjoy!
