Many people aren’t familiar with okra,  but it’s a wonderful vegetable and once you try it you’ll be in love.

I serve this braised okra as a side dish with just about everything. Enjoy.

Ingredients

  • 1 lb fresh okra (or 1 package frozen)
  • 1, 6 oz can tomato paste
  • 1 onion, sliced
  • 1 cup water
  • 2 cloves garlic, smashed
  • 3 tbsp olive oil
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • kosher salt to taste

Instructions

  • 1. Wash and slice okra, if fresh. Thaw and drain if frozen.
  • 2. Heat a pan with oil over medium heat.
  • 3. Add onions and sauté until translucent. Add okra, garlic and sauté for 5-6 minutes.
  • 4. Add tomato paste, water, cumin, paprika and chili powder. Salt to taste. Close lid and cook for 15 minutes. Serve!
