This is a recipe for blueberry banana muffins. I always make this whenever I have bananas that have gone a bit brown, but I feel really bad throwing them out. After you try this recipe once, you’ll be waiting for your bananas to turn brown faster! A few simple ingredients will turn your boring morning into something to look forward to.

If you love banana bread and blueberries, you will love these muffins! These muffin fill the house with the most amazing smell. I’d love to wake up to a batch. Maybe my husband will learn how to makes these… in the very near future.

Ingredients

  • 6 tbsp butter
  • 6 tbsp brown sugar
  • 1 cup overripe bananas, pureed
  • 1 egg
  • 1 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • zest from 1 lemon
  • 1 cup frozen blueberries, rinsed and drained

Instructions

  • 1. Preheat oven to 375 degrees Fahrenheit. Line large muffin cups with paper liners.
  • 2. Cream butter and brown sugar using a standing or hand mixer until light and fluffy. Mix in banana, then egg.
  • 3. Combine flour, baking powder, baking soda, salt and lemon zest. Mix into banana mixture on low until just moistened. Do not over blend.
  • 4. By hand, gently fold in the blueberries.
  • 5. Fill each muffin cup a little more than halfway full with batter. Bake for 20-25 minutes, or until a toothpick inserted into center of a muffin comes out clean.
  • 6. Cool for 10-15 minutes and serve!
