Crepes are like a very thin pancake, but so much more delicious! Your first few tries may be disasters, but keep at it and you’ll be a pro by the end of your first batch of basic crepes.

Ingredients

  • 3/4 cup flour
  • 3 eggs
  • 1 tsp salt
  • 1 1/4 cup water, milk or rice milk
  • 3 tbsp butter or margarine
  • grapeseed oil for frying

Instructions

  • 1. Blend flour, eggs, salt and cup of water, milk or rice milk in a blender for about 30 seconds. If you are mixing by hand, start with flour and eggs, then add salt and milk and stir until everything is evenly incorporated and there are no lumps. Refrigerate for 1 hour.
  • 2. Heat a pan over medium heat. Right before cooking the crepes, melt butter or margarine and incorporate into batter.
  • 3. When the pan is hot, add a few drops of oil. Pour in around 3 tbsp batter. Swirl the pan so that the batter is distributed evenly over the entire pan.
  • 4. Cook until the edges of the crepes start lifting off the pan. Using a metal spatula, carefully flip the browned crepe. Remove when done.
  • 5. Stir the batter in between each crepe and repeat until all the batter is used.
