Baked Tomatoes

This is a recipe for baked tomatoes. I like to use cherry tomatoes since they are the perfect size to pop in your mouth. I just cut them in half and roast them in the oven. I season the tomatoes with salt, pepper and fresh thyme then drizzle with some great olive oil and bake until lightly browned. They caramelize in the oven, which makes them even sweeter.

These delicious bite sized tomatoes make a great side to any meal as well as a great starter. Easy, fresh and delicious. Enjoy!

Ingredients

  • 20 cherry tomatoes, cut in half
  • 1/4 cup good olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 2 sprigs fresh thyme

Instructions

  • 1. Preheat oven to 400 degrees Fahrenheit.
  • 2. Slice the tomatoes in half and place them, cut side up, in a single layer on a sheet pan or baking pan. Drizzle with olive oil and season with salt and pepper and thyme.
  • 3. Roast for 35-40 minutes then serve.
