This is a recipe for baked gnocchi. If you are a baked ziti lover, you will love this dish. The gnocchi replaces the usual ziti pasta.  The delicious gnocchi pillows of goodness taste even better when baked with a basic tomato sauce and topped with fresh mozzarella.

Ingredients

  • 4 potatoes
  • 1- 1 1/2 cup flour
  • 1 large egg yolk
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 1/2 cup tomato sauce,  click here for recipe

  • 6 oz mozzarella, shredded
  • fresh basil, diced for garnish

Instructions

  • 1. Place the potatoes in a large pot and cover them with water. Cook until tender, about 30 minutes. Drain and let cool slightly.
  • 2. When potatoes are cool enough to handle, peel and pass through a ricer or food processor.
  • 3. Line a baking sheet with parchment paper. In a bowl, combined the pureed potatoes and flour.
  • 4. Make a well in the middle of the potatoes. Add the egg yolk and salt. With a fork, slowly work the wet ingredients into the potato mixture. When incorporated, turn dough over onto a floured surface.
  • 5. Knead until the potato dough just comes together into a ball. Divide the ball into 4 pieces.
  • 6. Roll each piece into a rope about 1 inch thick. Cut each rope in 1/2-inch pieces. Place the finished gnocchi on the baking sheet, and repeat with rest of the dough.
  • 7. Drop the gnocchi into boiling water with extra salt and the olive oil. Cook for 4 minutes, and drain.
  • 8. Pre-heat the oven to 350 degrees F. Transfer the gnocchi to a baking dish, top with tomato sauce and mozzarella cheese.
  • 9. Bake for 20 minutes until the cheese is melted. Serve immediately!
