Anything on puff pastry is delicious. So I don’t need to tell you how delicious this asparagus and goat cheese tart is.

Try this tart for yourself and you’ll be more than impressed. This recipe is great for a vegetarian lunch or dinner.

Ingredients

  • 1 sheet puff pastry
  • 1 cup goat cheese
  • 1 lb asparagus
  • salt
  • pepper
  • 1 tbsp olive oil
  • 1/4 cup Parmesan cheese

Instructions

  • 1. Preheat oven to 420 degrees Fahrenheit.
  • 2. Line a baking sheet with parchment paper. On top of parchment, roll puff pastry to a rough 8×12-inch rectangle and trim uneven edges.
  • 3. Crumble goat cheese over the pastry. Top with asparagus, in a straight line. Season with salt and pepper, and sprinkle with Parmesan cheese and olive oil.
  • 4. Bake for 25-30 minutes or until the pastry is lightly browned.
  • 5. Let pastry cool for 5-10 minutes before serving. Cut into slices. Enjoy!
