This is a recipe for arugula salad with mozzarella and tomatoes. It’s very refreshing and it takes less than 5 minutes to put it together. It even looks delicious.

I toss the arugula together with some cut up tomatoes, throw a few olives in, tear some fresh mozzarella apart and dress with olive oil and balsamic vinegar and it is ready to serve.

This salad is a perfect starter or a delicious, light and healthy lunch. This simple salad reminds me of how I wish I ate all the time. Fresh and great quality produce should be enjoyed just this way. Serve with some freshly baked bread. Enjoy!

Ingredients

  • 8 oz fresh mozzarella
  • 1 lb arugula
  • 1/4 cup black olives
  • 1 plump tomato, cut into wedges
  • 1tbsp (good quality) balsamic vinegar
  • 1 tbsp extra virgin olive oil (good quality)
  • salt and pepper to taste

Instructions

  • 1. Wash and dry the arugula. Spread the greens on a platter.
  • 2. Top with the cut tomatoes and fresh mozzarella.
  • 3. In a small bowl, combine the balsamic vinegar and the olive oil. Season with salt and pepper and mix.
  • 4. Drizzle the vinaigrette over the salad, top with olives and serve.
