This is a recipe forĀ apple crumb cake, which is filled with juicy baked apples and topped with a crunchy crumb topping.

The sour cream in the cake is a great addition that keeps it very moist. This cake is a great end to any meal, or perfect to serve just with tea and coffee.

Right before serving I like to top the cake with a scoop of vanilla ice cream. Enjoy!

Ingredients

  • 12 tbsp plus 2 tsp unsalted butter
  • 2 cups packed light brown sugar
  • 2 large eggs
  • 2 1/2 cups all purpose flour
  • 1/2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 2 cups apples, peeled, cored and chopped
  • ice cream, for serving

Instructions

  • 1. Preheat oven to 350 degrees Fahrenheit. Lightly grease a 13x9-inch baking dish with 2 tsp butter.
  • 2. In a large bowl or standing mixer, beat 8 tbsp butter and 1 1/2 cups brown sugar until light and fluffy. Add eggs, one at a time, beating after each addition.
  • 3. In a separate bowl, sift 2 cups flour, baking soda, 1 tsp cinnamon, and salt. In another small bowl, combine sour cream and 1 tsp vanilla.
  • 4. Add flour mixture to butter mixture in batches, alternating with sour cream. Fold in apples and transfer batter to the prepared baking dish, spreading the mixture evenly.
  • 5. In a bowl, combine 1/2 cup brown sugar, 1/2 cup flour, 1/2 tsp cinnamon, and 4 tbsp butter. Mix until the topping resembles coarse crumbs. Sprinkle the topping mixture evenly over the cake.
  • 6. Bake cake until golden brown, about 35-40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes. Serve with ice cream. Enjoy!
