Zucchini Latkes

In the summer I buy zucchini all the time. It’s in season, it’s fresh, and I love them grilled.

But this weekend, I decided not to grill, and I made zucchini latkes instead. Plus, as an added bonus, my daughter tried them for the first time and loved them! My mini food critic was pretty impressed, meaning that these zucchini latkes are pretty delicious.

Ingredients

  • 3 large zucchini
  • 3/4 tsp kosher salt
  • 1 large egg
  • 1/4 cup rice flour
  • 3 tbsp fresh chives, finely chopped
  • 2 tbsp fresh dill, finely chopped
  • 1/4 tsp freshly ground black pepper
  • 1/3 cup frying oil

Instructions

  • 1. Grate zucchini on the large hole of a box grater, or using the grating attachment of a food processor.
  • 2. Place grated zucchini in a colander set in the sink and toss with 1/2 tsp salt. Let stand 10 minutes to drain off excess liquid.
  • 3. Wring zucchini dry using your hands. Place in a large bowl and gently mix in egg, flour, chives, and dill. Season with remaining salt and pepper.
  • 4. Heat oil in a large skillet over medium heat. Working in batches, drop 1/4-cup zucchini mixture into the skillet. Fry until golden and crisp, about 3 minutes per side. Transfer fritters to a paper towel–lined plate, season with salt and serve!
