Scrambled Eggs with Smoked Salmon

Ingredients:

8 eggs

1/2 cup olive oil

salt and pepper to taste

1/2 lb smoked salmon

Instructions:

1. Heat skillet over medium heat. Add olive oil.

2. Whisk eggs. Pour into the skillet and cook until softly set, stirring constantly, about 4 minutes.

3. Season to taste with salt and pepper.

4. Top with some lox or smoked salmon. Enjoy!
