4 large eggs
1/4 cup whole milk
1/2 tsp freshly ground black pepper
1/4 tsp salt
1/4 cup freshly grated Parmesan
1/4 cup grated American cheese
1 cup cherry tomatoes, chopped
2 tbsp chopped parsley leaves
1. Preheat oven to 375 degrees Fahrenheit. Prepare muffin tin by coating with nonstick spray.
2. Meanwhile, whisk eggs, milk, pepper, and salt in a large bowl. Stir in cheese, parsley and cherry tomatoes.
3. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, 8-10 minutes.
4.Using a rubber spatula, loosen the frittatas from the muffin cups and slide onto a platter. Serve immediately.
