1 tbsp butter
2 shallots, minced
1 frozen package spinach, thawed and liquid squeezed out
coarse salt and ground pepper
4 oz Gruyere cheese, grated
1 premade pie crust
4 large eggs
1 cup half-and-half
1/8 tsp ground nutmeg
1. Preheat oven to 350 degrees Fahrenheit. In a large skillet, heat butter over medium heat. Add shallots, and cook until softened, 1 to 2 minutes. Add spinach and season with salt and pepper
2. Transfer spinach mixture to crust, and top with cheese.
3. In a large bowl, whisk eggs, half-and-half, nutmeg, 1 tsp salt, and 1 tsp pepper. Pour egg mixture over the spinach and cheese.
4. Bake until center of each quiche is just set, 55 to 60 minutes. Let quiche rest for 15 minutes before serving. Enjoy!
